- Take three pieces of rice paper, dip each one in the cold water individually, and stack them together.
- Make sure to eliminate any bubbles or excess water between the rice papers. Roll them tightly to form the rice cakes.
- For bite-sized pieces, cut them in half, or leave them long for a noodle-like appearance.
- Cut the edges if uneven.
- For a Tasty Variation:
- Take another set of one or two rice papers, dip, stack, and fill the middle with a sliced cheese or sausage.
- Fold the sides tightly over the cheese/sausage, creating two or more rice cakes.
- Importantly, refrain from cutting these into pieces.
- Make Tteokbokki Sauce:
- In a mixing bowl, create the flavourful Tteokbokki sauce by combining Gochujang, Gochugaru, Light Soy Sauce, Distilled Vinegar, chopped garlic, and a half teaspoon of either white sugar or brown sugar.
- Ensure a thorough mix to achieve a well-balanced sauce.
- Create Broth:
- Start by adding a dried Kombu Strip to 500ml of water (250ml for starter kit) in a pot, bring it to a simmer(10 minutes), and set it aside. Simultaneously, prepare a separate pot with vegetable broth powder dissolved in 500 ml water (250ml for starter kit), bring it to a simmer(7-10 minutes), and set it aside as well.
- Cook Vegetables:
- Heat sesame oil in a pan, adding chopped green onion, white onion, Shiitake Mushrooms, and diced carrots.
- Sauté these vegetables and enhance the flavours by adding a seasoning sauce for an extra umami kick.
- Allow the vegetables to cook until they reach a tender consistency.
- Cook Meat:
- For those opting for a non-vegetarian version, marinate chicken or your preferred meat with Gochugaru and a drizzle of Seasoning Sauce.
- Cook the meat until it becomes tender and mix it with the sautéed vegetables.
- Combine Everything:
- Using the same pan, pour in both the prepared kombu broth and vegetable broth as per the desired consistency required.
- Introduce the Tteokbokki sauce to the mixture.
- Add cabbage and lettuce, letting it all simmer until the sauce thickens.
- Adjust the salt according to your taste preferences.
- Finally, add the soaked rice cakes to the pan and let them simmer for not more than 1-2 minutes.
